It’s amazing how effective it is when you just sit down and don’t rush through a meal.
We Americans like things BIG and FAST. Unfortunately, that also includes meals.

Well you asked for some interesting facts and these are the ones I am currently looking at (hope they copied in ok if not I can email).

I have looked at 5 different developed nations and found the US is the unhealthiest, has the shortest life span, the largest number of obese people and spends more than double per capita on health care. They also spend significantly less of their disposable income on food, eat more calories (even if you adjust for size differences) and eat a lot less fruit and veg. Just to top it off, the US policies suggest the population should eat less F&V that the other nations reviewed.
There is a lot of evidence that fruit and veg consumption is a key driver in health and life expectancy. A British study has found that a person who does not smoke, eats 5-7 serves of F&V per day, drinks alcohol in moderation only and does some exercise can expect to live 14 years longer. A Danish study and a Harvard study found similar results. Eating 5 – 7 serves of F&V per day decreases risk of cancer, heart disease etc by over 30%. Eating 2 more serves over this (ie 7 to 9) decreases mortality a further 9% and the risk of cancer and heart disease by a further 11%.
I have a question for you about Vitamin D deficiency. Evidence indicates that most people increase their weight by 3 to 8lbs in winter due to eating more food (carbs especially) and a lower inclination to exercise. There may also be another insidious problem, Vit D deficiency due to lack of sun exposure. It is known that lack of Vit D is a driver of obesity (as well as bone issues and osteoporosis) and in winter most of us do not get enough sunlight to manufacture Vit D. I come from a sunny country (Australia) and now live in a country (Hong Kong) that has limited sunshine in winter. I am suffering weight gain, bloating, tiredness and metabolic slowdown despite increasing exercise and being very strict about my diet. This happens to me every winter in HK and also when I used to lived in London. Anyway, governments in their infinite wisdom have fortified cereals and milk with Vit D to help overcome this issue but of course many of us on strict programs do not eat enough of these foods. I have just started on 2000 IU of Vit D per day and hope this helps me. I was wondering if you have any insights on how to prevent this problem.
This is not just a problem for people living in cold and cloudy environments as a recent study from McGill Uni showed that of a group of young healthy Californian women, whom you would expect are getting sunshine, 59% were Vit D deficient and 25% severely so.
